Frozen Fresh Abalone Steaks
The abalone steaks are 1 to 1.25 oz each and sold in packages of one dozen. Suggested serving is 4 abalone steaks per adult person.
The abalone meat is removed from the shell, trimmed and tenderized prior to being vacuum packed and frozen fresh to ensure a high quality product.
The abalone is shipped frozen.
After the consumer receives the abalone it should be kept frozen until it is defrosted for cooking. For defrosting the abalone we recommend placing the abalone, while still inside the plastic packaging, into a container of room temperature water for about 10 minutes. After the abalone is defrosted it should be removed from the plastic bag and rinsed with water before cooking.

Live Abalones in the Shell
Sizes:
SMALL: 81-90g, (5.5 abs/lb.) These abalone are only sold by the piece. This size is very popular with restaurants that like to order by the piece.
MEDIUM: 91-110g, (4.5 abs/lb.) These abalone are only sold by the pound.
LARGE: 131-150g, (3 to 3.5 abs/lb.) These abalone are only sold by the pound.
Handling Abalone:
The abalone are shipped in plastic bags filled with oxygen. The plastic bags are inside of Styrofoam boxes with cold packs. The abalone can stay alive in this condition for up to 48 hours. Do not open the plastic bag with the abalone until they are ready to be placed back into seawater or have the meat removed from the shell. Generally, abalone lose water weight of about 10-15% of their total weight during shipping.
The water weight abalone lose during shipping can be recovered by placing the abalone back into seawater.
